STRAWBERRY FLUFF DESSERT | |
2 pt. fresh strawberries 2 env. unflavored gelatin 1/2 c. water 1 c. orange juice 1/2 c. sugar 1/4 c. milk 4 lg. egg whites Dash of salt Wash berries in cool water in colander; drain well. Set aside 10 whole berries for garnish. Remove stems of other berries that you washed and place them in a large bowl and crush very well. I use a potato masher. Sprinkle gelatin over water in small saucepan. Heat over low heat until gelatin dissolves. Add to crushed berries. Stir in orange juice, 1/4 cup sugar and milk. Chill mixture until slightly thickened, about 20 minutes. Beat egg whites and salt, while waiting for above, until foamy on high speed. Beat in remaining 1/4 cup sugar, 1 tablespoon at a time. Continue to beat until whites are stiff. Fold into chilled berry mixture. Turn into serving dish and let it be a pretty one as dessert is flamingo colored and lovely to see. Chill until firm. Remove stems of nine reserved whole berries. Cut hulled berries into halves. Place Cool Whip or whipped cream in the center of your dish and surround with berry halves; then top with the whole berry. Makes 8 servings. Worth any effort to make this! |
