JELLY ROLL | |
4 eggs 3/4 cup sugar 1 teaspoon vanilla extract 3/4 teaspoon baking powder 1/4 teaspoon salt 3/4 cup sifted cake flour Sift last three ingredients. Break eggs into mixing bowl. Place bowl in hot water. Beat eggs until thick and lemon colored. Add sugar slowly, beating continuously. Remove bowl from pan of water. Add vanilla extract. Fold flour into egg mixture. Line a greased 10-1/2 x 15-1/2 inch jelly roll pan with greased wax paper. Pour in batter. Bake in pre-heated oven for 18 minutes at 375°F. Turn out immediately on a damp towel. Remove wax paper. Roll up in damp towel for 1 minute. Unroll. Roll up again and cool. Unroll and spread with jelly or any favorite filling. Dredge with powdered sugar or add color with bright cake decorations. Makes 12 slices. |
