CHEESY COATING FOR OVEN-FRIED
CHICKEN
 
3 slices bread, dried
1/3 c. cornmeal
1/2 c. grated Parmesan cheese
1 tsp. salt
1/2 tsp. onion powder
1 (2 1/2 to 3 lb.) chicken, pieces
1/8 tsp. garlic powder
1/4 tsp. thyme
Dash of pepper
1/4 c. butter, melted

Coarsely crush bread. Combine bread, cornmeal, Parmesan cheese, salt, onion, and garlic powder, thyme, and pepper. Dip chicken pieces in melted butter; roll in cheese mixture to coat. Place chicken pieces, skin side up, in lightly greased baking pan. Bake at 400 degrees for 1 hour. Do not turn. 4-6 servings.
