FRESH ZUCCHINI FRITTATA | |
1 1/2 tbsp. butter 1/4 c. thinly sliced scallions 2 c. thinly sliced zucchini 8 eggs 1/2 c. water 1 tsp. season salt 1/8 tsp. Tabasco 1/2 c. diced fresh tomato Melt butter in skillet which can go in oven. Add onion and zucchini. Saute quickly until crisp tender. Beat eggs, stir in water, salt and Tabasco. Pour over zucchini and sprinkle tomato on top. let cook on medium heat 5 minutes, then bake in 350 degree oven for 20 to 25 minutes until eggs are set and to is dry. |
