MUSHROOM MEATLOAF 
3 lbs. ground beef
1 lg. onion, copped
1 egg, beaten
1 c. seasoned bread crumbs
16 oz. tomatoes (stewed or sauce)
1/2 tsp. each salt and pepper
(Optional - dry red peppers for spice-Parmesan cheese, basil, garlic)
2 cans (4 oz. each) sliced mushrooms, reserve juice from can

Drain mushrooms and reserve juice. Mix bread crumbs with beaten egg. Add onion, salt and pepper and other spices (per choice). Add some of mushroom juice. Add ground beef to this mixture and mix thoroughly.

In a square pan (at least 4 inches deep) place one half of beef mixture and flatten with hand (do not pack tight). Top with a layer of sliced mushrooms. Place 2nd half of beef mixture on top of mushrooms. Top with tomatoes (sauce, pureed or stewed). Bake at 350 degrees for 1 hour. Serves 6-8. Also excellent cold or sliced in sandwiches.
