1/2 c. butter 4 oz. unsweetened chocolate 2 c. sugar 2 eggs 1 1/2 c. milk or 1 1/2 c. water and skim milk 2 c. sifted cake flour 2 tsp. baking powder, rounded 1 c. nut meats, chopped 2 tsp. vanilla 1 tsp. salt Cream sugar and butter; beat eggs and add to creamed mixture. Add melted chocolate. Sift dry ingredients and alternately add with liquid. Add vanilla and nut meats. Bake in loaf pans at 350 degrees for 40 to 50 minutes. Be sure to use large enough pan as it rises considerably. Bake 1 hour if using 8 inch round pans, or 2 larger pans. A pan 2 5/8 inches deep - the batter comes to top. ICING - MOCHA: 3 oz. pkg. cream cheese 2 oz. melted chocolate, unsweetened 3 tbsp. strong coffee 2 c. powdered suger (not 4X-10X) 1 tsp. vanilla Pinch of salt Cream chesse until soft, work in sugar until fluffy. Stir in melted chocolate, add vanilla and coffee. |
