EASY COFFEE CAKE 
1 egg
1/2 c. sugar
1/2 c. milk
3 tbsp. melted butter
1 1/2 c. whole wheat flour
1 1/2 tsp. baking powder
1/2 tsp. salt
Whole wheat topping
Powdered sugar (opt.)

TOPPING:

1/2 c. packed brown sugar
1/4 c. finely chopped pecans
3 tbsp. soft butter
1/4 c. whole wheat flour
1 tsp. ground cinnamon

Beat egg. Add sugar, milk and melted butter. Stir in flour, baking powder and salt, blending well. Turn into a well greased 8" round cake pan. Prepare the topping by blending well the brown sugar, flour, pecans and cinnamon. Mix in the soft butter until mixture resembles soft bread crumbs. Sprinkle cake evenly with the topping. Bake at 375 degrees for 15 to 20 minutes or until cake tests done in center. Sprinkle with powdered sugar.
