MILDRED'S BAKED BEANS | |
1 lb. navy or pea beans 1 tsp. baking soda 1 tbsp. salt 1 lb. bacon, uncooked 1 c. sugar 1 tbsp. maple syrup Soak beans anywhere from 2 hours to overnight, after rinsing and sorting through them. Put beans in large kettle and cover with cold water and bring to boil. Add 1 teaspoon baking soda and let boil 15 minutes, then drain and add hot water to cover, salt and bacon. Cook until mushy, stirring frequently - add a little water if needed, approximately 1 1/2 hours. Remove from heat, stir in sugar, maple syrup and bake in 375 degree oven for 45 minutes to 1 hour. Remove while still lightly liquid, let set. |
