PEACH MUFFINS 
1 1/2 c. all-purpose flour
3/4 tsp. salt
1/2 tsp. baking soda
1 c. sugar
2 eggs, beaten
1/2 c. chopped almonds
1/2 c. oil
1 1/4 c. peaches (canned or fresh chopped)
1/2 tsp. vanilla
1/8 tsp. almond extract

Combine flour, salt, baking soda and sugar. Make well in center of dry ingredients. Add eggs and oil. Stir only until ingredients are moistened. Stir in peaches, vanilla, extracts and nuts. Put 1/3 cup of batter into each greased muffin tin. Bake at 350°F for 20-25 minutes.

Variation - Peach Bread: Pour into greased 9-inch loaf pan. Bake 1 hour at 350°F.
