NEW ENGLAND CLAM QUICHE 
1 (9" or 10") baked pastry shell, lightly pricked
1/2 lb. bacon, cooked & crumbled
1 (15 oz.) can condensed New England clam chowder
4 eggs, beaten slightly
1/2 c. finely chopped onion
1/2 c. sour cream
2 tsp. parsley
1/4 tsp. pepper
4 slices American cheese

1. Preheat oven to 400 degrees.

2. Bake pie shell 8 minutes; remove from oven.

3. Reduce heat to 325 degrees.

4. In bowl, combine bacon, chowder, eggs, onion, sour cream, parsley and pepper.

5. Mix well.

6. Pour about 2/3 of mixture into shell.

7. Arrange cheese slices on top.

8. Top with remaining mixture.

9. Bake 50 to 55 minutes or until set.

10. Let stand 20 minutes before cutting. Refrigerate leftovers.
