CLAM CHOWDER | |
1 inch thick slice salt pork 1 1/2 pt. fresh clams, minced 3 qt. water 2 1/2 potatoes, peeled and diced 1 onion, chopped 2 1/4 tsp. salt Fry salt pork over medium heat in large Dutch oven until done. Remove pork, reserving drippings in pan. Dice pork. Combine with remaining ingredients in Dutch oven. Bring to a boil, reduce heat, cover and simmer about 2 hours and 15 minutes or until potatoes are tender. Yields 10 to 12 servings. |
