CHICKEN AND BROCCOLI AU GRATIN 
1/4 c. butter
1/4 c. chopped onion
1/4 c. flour
1 tsp. salt
4 chicken breasts
Dash pepper
4 oz. can sliced mushrooms
13 oz. can evaporated milk
2 pkgs. frozen broccoli
1 pkg. shredded Cheddar cheese

Boil chicken until done. Pull chicken off bones and break into small pieces. Cook broccoli until 3/4 done. Drain. Set aside. In deep fry pan, melt butter. Saute onions until transparent. Remove from heat. Stir in flour, salt and pepper. Drain mushrooms in measuring cup. Add water to make 1/2 cup liquid. Stir in flour mixture. Put back on stove.

Blend in evaporated milk and mushrooms until smooth. Cook and stir over medium heat until thickened. (If sauce becomes too thick, add regular milk). Put broccoli, chicken and sauce in baking dish. Add cheese. Cover with foil. Bake at 375 degrees for 20-30 minutes.
