ZUCCHINI QUICHE 
3 c. finely shredded zucchini
1 sm. onion, finely chopped
1 c. Bisquick
4 lg. eggs
1/2 c. vegetable oil
1/2 c. grated Parmesan cheese
1-2 tsp. parsley, fresh or dried
1/2 tsp. salt and pepper

Mix all ingredients except zucchini in bowl. Add zucchini, blending well. Pour into buttered uncovered casserole. Bake at 350 degrees for 30 minutes or until golden brown. Cut into squares. Makes a 3 1/2 quart casserole.
