CATFISH WITH COCONUT MILK 
3 med. size catfish
1 tbsp. cooking oil
1/4 c. white vinegar
1 onion, sliced
1-inch piece fresh ginger, peeled and cut in thin strips
2 cloves garlic, minced
1 c. thin coconut milk
1 tsp. salt
1/4 tsp. black pepper
1/4 c. thick coconut milk

Clean fish well and fry in cooking oil. Place fish in a small pan and add vinegar, onion, ginger, and garlic. Simmer a while and add thin coconut milk. Season with salt and pepper, then add thick coconut milk. Serve hot with cooked rice.
