CHARLOTTE'S CHEESE BISCUITS 
2 1/2 to 3 c. sifted self-rising flour
1 1/2 c. grated New York sharp cheese
1 c. vegetable shortening
1 c. milk

Sift 2 1/2 cups flour into a large bowl. Add other ingredients in order, mixing after each addition. Dough should be sticky. Add more flour, if necessary. Turn out onto floured surface. Roll 1/2 inch thick and cut with biscuit cutter. Place on ungreased cookie sheet.

May be frozen at this point and kept in bags in freezer. Bake at 450 degrees for 10 to 15 minutes or until very lightly browned. May be baked frozen. Adjust time accordingly, but should not take longer than 15 minutes.
