HAM CAKES 
2 c. ground ham
1 c. mashed potatoes
1/2 c. onion chopped fine
1/2 c. celery chopped fine
2 lg. eggs
2 tsp. prepared mustard
1 tbsp. Worcestershire sauce
1/4 tbsp. pepper
2 tbsp. olive oil
2 tbsp. butter

Combine ham and potatoes, saute onion and celery in 1 tablespoon butter. Mix with ham.

Beat eggs, mustard, Worcestershire sauce and pepper. Add to ham and mix. Make 16-18 balls and flatten slightly. Refrigerate 1 hour, important.

Heat olive oil and 1 tablespoon butter and cook cakes 3-4 minutes on each side until golden brown. Do not crowd cakes in pan.
