ROLLED MEATLOAF 
1 1/2 lb. ground beef
1/4 c. crushed saltine crackers
1 egg
1/2 c. milk
Salt

Pepper Chopped onions Chopped green peppers Chopped tomatoes

In a large bowl blend ground meat, crackers, egg, milk, salt and pepper. Mix until well blended.

Moisten a piece of waxed paper 18 inches long. Pat meat mixture to make a rectangle 9 x 12 inches. Spread onions, green peppers, tomatoes evenly. Sprinkle over this mixture the crushed crackers.

Roll as for a jelly roll starting with a 9 inch side, making a complete roll. Place in a lightly greased 9 x 5 inch bread pan.
