CHINESE BOILED CHICKEN 
1 large whole chicken
1 teaspoon salt
2 inch fresh ginger
1 bulb fresh garlic
6 spring onions
2 teaspoons sesame oil
1/3 cup vegetable or peanut oil
soya sauce

Place whole chicken in a large pot and cover with cold water, add salt, add sesame oil, peel ginger and add the peel to the pot. Finely chop the rest and set aside, take the bulb of garlic and peel 4 cloves.

Finely chop the garlic and set aside. Run your knife through the rest of the garlic skin and all and toss into the pot. Set aside and chop 2 tablespoons of spring onions, throw the rest in the pot. Bring the chicken to the boil, simmer for 10 min, switch stove off and allow chicken to stand in the pot for 1 hour.

Remove chicken from pot and allow to cool. Once cooled, cut the chicken into 8 pieces and place on a serving plate.

In a frying pan, saute vegetable or peanut oil, chopped fresh garlic and ginger, being careful not to burn the garlic and ginger. Infuse the oil for a while on a medium heat, then pour it over chicken.

Sprinkle with plenty of soy sauce and garnish with chopped spring onion.

Try putting in 1 tablespoon of 5 spice powder and 1/2 cup of chinese bbq sauce when boiling, even better.
