SPANAKOPITAKIA 
1/2-1 c. chopped onion
3 sm. boxes frozen spinach
10 eggs
1 lb. feta cheese
1 box filo
Oil
1/2 tsp. dill salt
Dash of pepper
Butter, melted

Saute onion in oil. Add spinach and 1/4 cup water. Cover and cook until spinach is done. Beat 10 eggs and add 1 pound feta cheese. Add egg-cheese mix to spinach. Use melted butter to brush each of 6 layers of filo. Pour in spinach mixture. Cover with 6 more butter brushed filo leaves, cut into pieces and bake at 350 degrees for 1 hour. Bite size pieces can be made with 1 sheet filo buttered, 1 teaspoon spinach and fold as you would a flat into triangles.
