EGGPLANT CASSEROLE 
Boil 1 large eggplant that has been peeled and cubed with 1 medium onion. Prepare 1 box cornbread type Stove Top stuffing, 1 lb. hamburger meat sauteed. Mix drained cooked eggplant, hamburger and Stove Top stuffing. Put in casserole dish and top with Swiss or cheddar cheese. Bake at 350 degrees for 20 minutes or until cheese melts.
