CARROT - TUNA SALAD 
1 1/2 c. raw carrots, grated
1 c. celery, diced
1/2 tbsp. onion, grated
2 (6 1/2 oz.) cans tuna
1 c. salad dressing
1 (#2 1/2) can shoestring potatoes

Mix all ingredients together except shoestring potatoes. Chill 1 hour. Just before serving, add shoestring potatoes. Serve on lettuce leaf and garnish with hard cooked eggs, tomato wedges, etc. 4 to 6 servings.
