TEXAS BEEF SKILLET 
1 lb. ground beef
1 c. rice
3/4 c. chopped onion
1 1/2 tsp. chili powder
1/2 tsp. salt
1/2 tsp. garlic salt
1 (16 oz.) can tomatoes, cut up
1 (15 oz.) can red kidney beans
3/4 c. water
3 tbsp. chopped green pepper
3/4 to 1 c. shredded sharp cheese
Crushed corn chips

In skillet cook ground beef and onion until beef is brown and onion is tender. Drain fat. Sprinkle meat mixture with chili powder, salt and garlic. Stir in undrained tomatoes, undrained beans, uncooked rice, water and green pepper. Cover and simmer, stirring occasionally for 20 minutes. Top with cheese, cover and heat until cheese melts, about 3 minutes. Sprinkle with corn chips if desired. Serves 6.
