TEXAS BEEF BAKE | |
3/4 lb. ground beef 1/2 c. chopped onion 2 tbsp. chopped green pepper 1 (15 1/2 oz.) can red kidney beans, drained 1 (8 oz.) can tomatoes, cut up 1 (8 oz.) can tomato sauce 1/2 c. uncooked quick-cooking rice 1 tsp. chili powder 1/2 tsp. salt 1/4 tsp. garlic salt 1/2 c. shredded American cheese (2 oz.) In skillet cook ground beef, onion, and green pepper until meat is browned and vegetables are tender; drain. In 1 1/2-quart casserole combine beans, undrained tomatoes, tomato sauce, uncooked rice, chili powder, salt, and garlic salt. Add ground beef and vegetables. Bake, covered, in 350 degree oven for 35 minutes, stirring once or twice, until rice is tender. Top with shredded American cheese; bake 2 to 3 minutes more or until cheese melts. Makes 4 servings. |
