BANANA MUFFINS | |
1 1/2 c. all-purpose flour 1/2 c. sugar 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 egg 1/2 c. butter, melted 1 1/2 c. mashed ripe bananas 3/4 c. peanut butter chips In a bowl, combine flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, butter and bananas, then stir into dry ingredients just until moistened. Fold in chips. Fill greased or paper-lined muffin tins 3/4 full. Bake in 375°F oven for 18 to 20 minutes. Let cool for 5 to 7 minutes before removing from pan. |
