BAKED PINEAPPLE 
2 (20 oz.) cans chunk pineapple, drained (reserve juice)
1 c. grated Cheddar cheese
1 c. pineapple juice
1/2 c. brown sugar
6 tbsp. flour
1/2 c. white sugar
1/2 stick butter

Mix cheese with pineapple. Mix together pineapple juice, brown sugar, flour, white sugar, and butter. Heat the above ingredients until mixture thickens. Add to pineapple and cheese mixture; pour into 8-inch square baking dish.

TOPPING:

1 c. Ritz cracker crumbs
1/2 stick butter

Melt butter and mix with crumbs; spread on top. Bake 20 minutes at 350 degrees.
