BURGOO
 
First of all, BURGOO is pronounced (bur-gu), not (bur-goo). Now that we've got that straight, you simply must get over your fear of eating sheep.

While this recipe is for a 12 gallon kettle, you can reduce the recipe and cook it on your home stove.

Add enough water (approximately 5 gallons) to cover chickens, beef and sheep. Boil hours, long enough so that the meat falls off the bone.

2 chickens
3 lbs. of beef

Extract bones from pot and grind or chop meat to a fine texture. Add back to pot. Add:

3 lbs. cabbage (2-3 heads, shredded)
4 lbs. onions, minced finely
5 lbs. butterbeans, chopped finely
10 lbs. potatoes, grated

Cook about an hour. Add:

3 qts. V-8 juice
1/2 gallon tomato puree
1/2 gallon catsup
1 qt. Worcestershire sauce
1/2 pt. cider vinegar
1/2 pt. lemon juice

SPICES:

Liquid smoke
Salt
Pepper (1 oz.)
Red pepper (1 oz.)
