1-2-3 COOKIES (CRUNCHY!) 
2 c. oatmeal (quick or old fashioned)
1 c. brown sugar (dark or light)
1/2 c. salad oil

Mix together and let stand overnight. In the morning add:

1 whole egg
1/2 c. nuts (optional)
1/2 c. raisins (optional)
1/2 c. chocolate chips (optional)

Bake 15 to 20 minutes at 325 degrees.
