ZUCCHINI CASSEROLE 
4 c. zucchini squash
2 c. boiling water
1/4 c. green peppers
1 c. mayonnaise
Bread crumbs
2 eggs
1 med. onion
1 c. Parmesan cheese
1 tsp. butter
Salt & pepper

Blend onions and peppers; chop very fine. Cook squash in water until tender; drain. Beat egg in large bowl. Stir in all ingredients except bread crumbs and butter; add zucchini and dot with butter. Sprinkle with bread crumbs. Bake for 1 hour at 350 degrees.
