BANANA NUT BREAD | |
4 lbs. bananas (ripe) 4 lbs. sugar 16 eggs 2 c. buttermilk 2 c. oil 3 oz. vanilla 4 lbs. flour 3 oz. baking soda 1 oz. salt 3 c. pecans (or 6 kid size handfuls!) Peal bananas and blend until mush. Add sugar and mix well. Add eggs, buttermilk, oil and vanilla. Mix well. Sift salt and soda with flour, add slowly to banana mixture. Add nuts last and mix well. Grease six loaf pans well - divide mixture equally. Bake at 300 degrees for 1 1/2 hours. Check for doneness. Let cool on wire rack out of pans. |
