MOTHER'S BANANA NUT BREAD 
1 1/2 cups sugar
1/2 cup shortening
2 eggs
1 cup mashed ripe banana
1/4 cup buttermilk
1/2 tsp. vanilla or black walnut flavoring/Extract
1/2 tsp. baking powder
3/4 tsp. baking soda
2 cups all-purpose flour
dash salt
3/4 cup chopped nuts

Cream sugar, eggs, and shortening. Add mashed banana and buttermilk; blend well. Sift together baking powder, salt, soda, and flour. Add flour mixture to dough 1 cup at a time; mixing well after each addition. Add nuts and flavoring/extract, stir in.

Bake at 325°F in pan sprayed with Pam.

Makes 1 large loaf or can bake in 1 lb coffee cans (2) or small loaf pans.
