BANANA COCONUT CAKE 
3/4 c. shortening
2 1/2 c. sugar
2 1/2 c. flour
3 eggs
1 tsp. baking soda
5 tbsp. buttermilk
4 med. bananas, mashed
1 (7 oz.) can coconut
1 c. chopped pecans
1 tsp. vanilla

Cream shortening, add sugar, eggs and beat well. Add flour and soda alternately with buttermilk. Add bananas. Beat well. Add vanilla, coconut and nuts. Bake in tube pan 1 hour and 15 minutes or 1 hour and 30 minutes at 350 degrees.
