BANANA COCONUT CAKE 
1/2 c. butter
1 c. sugar
3 eggs
1 c. mashed ripe bananas
1/2 c. buttermilk or yogurt
1 tsp. vanilla extract
2 1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Grease and flour a 9 inch tube pan. Cream butter and sugar. Beat in eggs, one at a time. Add bananas, buttermilk or yogurt, and vanilla. Sift dry ingredients together and beat into banana mixture to blend. Pour half of batter into pan. Sprinkle with half the coconut topping (below). Add remaining batter and topping. Bake in 350 degree oven, about 50 minutes.

Coconut topping: Combine 1/2 cup grated coconut, 1/2 cup brown sugar, 1 teaspoon cinnamon, 1/2 teaspoon grated ginger.
