BANANA CAKE WITH COCONUT TOPPING 
2 ripe bananas, sliced
1/4 c. vegetable oil
1 egg
1 1/2 c. cake flour
2 tbsp. plus 1/2 tsp. sugar, divided
1 tsp. baking powder
1 tsp. vanilla
1 tsp. imitation butter flavor
1/2 tsp. baking soda
1 tbsp. plus 1 tsp. shredded coconut
1/2 tsp. cinnamon

Preheat oven to 350 degrees. Spray either round or square 8-inch pan with nonstick cooking spray.

Combine bananas, oil and egg. Mix until well blended. Beat in flour, half of sugar, baking powder, vanilla, butter flavor and soda. Pour into pan.

TOPPING: Combine coconut, remaining 2 teaspoons sugar and cinnamon. Sprinkle over batter. Bake 20-25 minutes. Let cool in pan for 5 minutes. Then remove to rack to cool.
