SOY SAUCE CHICKEN 
1 whole chicken (2 to 2 1/2 lbs.)
1/2 c. Kikkoman soy sauce (no substitute!)
2/3 c. sugar
2 tbsp. wine
4 slices fresh ginger root

Boil 1/2 cup soy sauce, 2/3 cup sugar, 2 tablespoons wine (almost any kind), 2 cups water, and 4 slices fresh ginger root (about the size of a nickel) in pot. Add chicken to pot. Cook approximately 1 hour or until done. Remove chicken meat from bones and place on platter. Pour remaining sauce over chicken. Sprinkle with chopped green onion and a few slices of mandarin oranges. Serve with white rice.
