CARROT SALAD 
2 lbs. carrots, shredded
1 can crushed pineapple, drain & save juice
Raisins
Coconut
8 oz. cream cheese
4 oz. whipped topping
1/4 c. sugar

Add pineapple to carrots. Add raisins and coconut to taste. Whip together cream cheese, whipped topping, sugar, and enough pineapple juice to make the right consistency for dressing to cover carrot mixture.
