PINEAPPLE BREAD PUDDING 
1 stick (softened) butter
1 c. sugar
1/2 tsp. cinnamon
4 eggs
3 - 5 slices of bread
13 1/2 oz. can crushed pineapple (drained)

OPTIONAL: 1/4 cup of either raisins or chopped pecan nuts

Heat oven to 325 degrees. Beat butter, sugar, and cinnamon on medium speed (about 1 minute). Add eggs and beat on high speed about 2 minutes or until light and fluffy. Fold in drained pineapple. Tear slices of bread in small pieces and stir. (Add enough bread to absorb most of the liquid). Add optional raisins or nuts. Pour into buttered 1 1/2 quart casserole dish. Bake uncovered 45 minutes to 1 hour or until knife inserted in the center comes out clean.
