CHICKEN STRATA 
8 slices day old white bread
2 c. diced, cooked chicken
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 c. finely chopped celery
1/2 c. mayonnaise
3/4 tsp. salt
dash pepper
2 slightly beaten eggs
1 1/2 c. milk
1 can condensed cream of mushroom soup
1/2 c. shredded sharp process American cheese

Butter 2 slices bread; cut in 1/2" cubes and set aside. Cut remaining bread in 1" cubes; place half of unbuttered cubes in bottom of 8"x8"x2" baking dish. Combine chicken, vegetables, mayonnaise, and seasonings; spoon over bread cubes. Sprinkle remaining unbuttered cubes over chicken mixture. Combine eggs and milk; pour over all. Cover and chill 1 hour or overnight. Spoon soup over top. Sprinkle with buttered cubes. Bake in a slow oven, 325 degrees, for 50 minutes or until set. Sprinkle cheese over top last few minutes of baking. Makes 6 servings.
