SOLE STUFFED WITH CRAB MEAT 
2 tsp. butter
2-3 scallions chopped, white portion only
1 stalk chopped celery
8 oz. fresh crab meat
3 tbsp. mayonnaise
1/2 tsp. dry mustard
2 lb. fillets
Salt
2 tsp. butter

Preheat oven to 375 degrees. Heat butter in large skillet and stir in scallions and celery. Cook them for about 2 minutes over medium heat. Stir mixture into crab meat; add mayonnaise, mustard, salt, and 1 teaspoon of lemon juice. Lay fillet on the counter, spread crab meat mixture over 1/2 of each fillet and then fold over other 1/2. Place cole in a buttered baking dish and dot with butter. Pour remaining butter over each piece. Bake for 15-20 minutes or until fish is cooked through.
