GROUND BEEF POTATO CASSEROLE 
1 lb. ground beef
2 tbsp. butter
2 tbsp. flour
1 tsp. seasoned salt
1 1/4 c. milk
2 oz. shredded processed cheese

TOPPING:

4 med. sized potatoes, 1/2" cubes
1 med. sized raw carrots, shredded
1 tbsp. chopped parsley

Brown beef, drain fat. Spread in bottom of 10 x 6 inch baking dish. Prepare white sauce by melting the butter, stir in flour. Slowly stir in milk until smooth, add salt. Cook over medium heat, stirring until sauce is thickened. Continue to stir and cook 1 minute more. Remove from heat and stir in cheese until melted.

Add potatoes and carrots, spread over meat. Cover with foil, and bake at 350 degrees for 45 minutes to 1 hour. Uncover, sprinkle with parsley. Return to oven, bake 15 minutes longer.

Serves 6.
