GARLIC - PARSLEY POTATOES 
3 lb. med. size red potatoes, unpeeled & sliced
1/4 c. olive oil
8 cloves garlic, minced
1 tsp. salt
1/2 tsp. freshly ground pepper
2 tbsp. chopped parsley, divided

Combine first 5 ingredients in a large bowl; toss to coat well. Layer half of potato mixture in a lightly greased, 12 x 8 x 2 inch baking dish. Sprinkle half of parsley over potatoes. Layer remaining potato mixture. Cover and bake at 350 degrees for 45 minutes or until tender. Uncover and sprinkle remaining parsley over potatoes. 8 servings.
