GARLIC PARSLEY POTATOES 
3 lbs. med. red potatoes, unpeeled & sliced
1/4 c. olive oil
8 cloves garlic, minced
1 tsp. salt
1/2 tsp. pepper
2 tbsp. chopped parsley

Combine first 5 ingredients in a large bowl. Toss to coat well. Layer half of potato mixture in a lightly greased 12 x 8 x 2 inch baking dish. Sprinkle half of parsley over potatoes. Layer remaining potato mixture. Cover, bake at 350 degrees for 45 minutes. Uncover and sprinkle parsley over potatoes. Makes 8 servings.
