Boneless skinless breast of chicken
1 med. onion, chopped fine
1 (16 oz.) can tomatoes, chopped
1 1/4 c. chicken broth
1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/2 tsp. salt
Pepper to taste
1 c. long grain rice

In large skillet cook chicken in butter for 15 minutes. Remove chicken. In same skillet cook onions until tender. To onions add chicken, undrained tomatoes, chicken broth, and spices. Bring to a boil. Reduce heat. Cover and simmer 30 minutes. Add rice, making sure rice is covered by the liquid. Cover and simmer another 30 minutes.
