BAKED CARAMEL CORN 
1 c. butter
1/2 c. light corn sugar
1 tsp. baking soda
4 qts. popped corn
2 c. brown sugar, packed (1/2 light & 1/2 dark)
1 tsp. salt
2 tsp. vanilla

Melt butter, stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring, for 5 minutes. Remove from heat, stir in soda and vanilla gradually. Pour over popped corn mixing well. Pour into shallow pan. Bake at 250 degrees for 25 to 30 minutes, stirring every 10 minutes. Remove from oven. Cool completely. Break apart and store in tightly covered container. Can pour on cookie sheet to cool. Makes it easier to break up.
