APPLE CRUNCH MUFFINS 
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon, divided
1/4 c. shortening
1 egg, lightly beaten
1/2 c. milk
1 c. diced apples
1/4 c. packed brown sugar
1/4 c. chopped pecans

Sift flour, sugar, baking powder, salt and 1/2 teaspoon cinnamon in mixing bowl, cut in shortening until fine crumbs form. Combine egg and milk; add to dry ingredients along with apples; stir just to moisten. Fill muffin cups 2/3 full.

Mix brown sugar, nuts and remaining 1/2 teaspoon cinnamon. Sprinkle on muffins and bake in preheated 375 degree oven for 25 minutes or until golden.
