NORWEGIAN RICE (BEST EVER)
2 qt. milk
1 c. long cooking rice
1 egg
3/4 c. sugar
1/2 tsp. salt
1 tsp. flour
1/2 c. rich milk

Bring 2 quarts of milk to a boiling point. Scald 1 cup of rice in boiling water, drain and add to the scalded milk and let cook very slowly, about 1 hour or until nearly done. A double boiler works great.

Then beat 1 egg, add 3/4 cup sugar, 1/2 teaspoon salt, 1 teaspoon flour and 1/2 cup rich milk. Mix well and add to cooked rice and cook until done over low heat.
