ORANGE PECAN BREAD 
2 3/4 c. whole wheat flour (can use white flour)
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/4 c. butter
1 c. honey
1 egg
2 tbsp. grated orange peel
3/4 c. orange juice
2 c. broken pecans (or coconut)

Sift together flour, baking powder, soda and salt. Cream softened butter and honey. Add egg and orange peel and cream well. Add sifted dry ingredients alternately with orange juice, mixing well after each addition. Stir in nuts.

Place batter in well buttered 9x5 inch loaf pan. Bake at 325 degrees for 1 hour and 10 minutes or until wood pick inserted in center comes out clean. Makes 1 loaf.
