BARLEY CASSEROLE 
1/2 c. butter
1 c. barley
1 med. onion, chopped
1/2 c. slivered almonds
1 pkg. Lipton onion soup
2 c. chicken broth
1 sm. can mushrooms
1 can water chestnuts, drained and sliced

Melt butter in large saucepan. Add barley, onions and brown lightly. Add all other ingredients; mix well. Pour into 1 1/2-quart casserole dish. Cover and bake at 350 degrees for 1 hour. To serve instead of potatoes.
