TUNA RICE PATTIES 
1/2 c. uncooked minute rice, cooked
1 (9 3/4 oz.) can tuna, drained
1 tbsp. minced onion
2 tsp. lemon juice
Dash parsley
Salt & pepper to taste
1 egg
Flour (see instructions)

Cook rice according to package directions. Add remaining ingredients to and including the egg. Mix well. Gradually add flour until you can form patties that will stay together. Heat 1/8 inch vegetable oil in skillet and add patties. Brown on each side until golden and crunchy. Serve with a green salad.
