1 1/4 c. sifted flour 3 tsp. baking powder 1 tbsp. sugar 1/2 tsp. salt 1 egg, beaten 1 c. milk 2 tbsp. salad oil or melted shortening Sift together flour, baking powder, sugar and salt. Combine eggs, milk and oil; add to dry ingredients, stirring just until flour is moistened, (batter will be lumpy). Bake in hot skillet or griddle. Makes about 12 dollar-size or 8 (4 inch) size pancakes. BUTTERMILK PANCAKES: Substitute buttermilk or sour milk for milk in above recipe. Add 1/2 teaspoon baking soda and reduce the baking powder to 2 teaspoons. |
