MINESTRONE 
3 tbsp. olive oil
1/2 c. finely chopped onion
1/4 c. finely chopped parsley
3 beef bouillon cubes
1 1/2 tsp. meat extract paste
1 tsp. dried basil leaves
1/4 tsp. pepper
1 1/2 c. diced pared potatoes
2 c. diced zucchini
1 c. sliced celery
1 c. shredded savoy cabbage
1 c. sliced carrots
1 (9 oz.) pkg. frozen cut green beans, thawed
1/2 c. raw regular white rice

Heat oil in large kettle. Add onion and parsley. Saute for 5 minutes. Add 3 quarts water; bring to boil. Add bouillon cubes and paste. Stir until dissolved. Add basil, salt, and pepper; simmer uncovered for 5 minutes.

Remove from heat. Add rest of ingredients except rice. Bring to boil. Reduce heat; simmer, covered, for 20 minutes. Add rice; simmer covered 25 minutes or longer until rice is tender. Makes 3 1/2 quarts.
